This is a handicapped accessible A-frame structure previously used for office and retail purposes. It is owned by Lawrence and Julie Evans who also own the adjacent Rise and Shine Espresso Shop. We are negotiating a 5 year lease contingent upon our ability to obtain necessary approvals to use the facility for equipment and food sales. Our principal business activity involves the demonstration and sale of wood-pellet fired smokers. To stimulate interest in the smokers and demonstrate the ease of preparing smoked foods using our smokers we will prepare and offer samples of smoked foods, side dishes and beverages. Meats will be smoked and baked outdoors in pellet fired smokers and kept warm in crock pots and an electric steam table for take-out sales. Other menu items will be from packaged sources or prepared elsewhere in commercial kitchens, and will be offered for sale in their original packaging, or served in small quantities in disposable containers. In this way there will be no significant change in building use and sewer effluent, avoiding costly and environmentally challenging retrofits to the plumbing and electrical systems. There will be no significant changes to the building to accommodate take-out only food service and BBQ sales activities. Cooked and uncooked meats will be stored in refrigerators and freezers that are plugged into the existing 110 volt outlets. The outdoor smokers use wood pellets suitable for human consumption and are equipped with grease and ash containment systems. Cooked meat and sides will be served from crock pots or a portable electric steam table equipped with a sneeze guard. Some meats and seafood will be vacuum-packed and displayed in a refrigerated display unit that plugs into the wall. All take-out service items are disposable to minimize washing and attendant water use. There will be no food preparation inside, other than opening packages of prepared foods for immediate sale and the packaging of smoked meat on site will be limited to cooking meat and fish in outdoor smokers.
