COMMERCIAL KITCHEN
PRE CONSTRUCTION INSPECTION
1 . Scope of project : Install convection oven and counter top gas
stove, dishwasher.
Code sections referenced in report are from 1994 UBC, 1994 UMC,
and 1991 UPC.
At the time of inspection 6/27/96 there was a 16ga.
stainless steel kitchen hood mounted at aprox. 18" from the
ceiling at the closest point, and mounted directly to the back
wall . the hood was suspended with noncombustible hanger
brackets and secured to the ceiling framing .
SECTION 5.05 . 7 UMC REQUIRES THAT HOODS BE MOUNTED WITH THE
SAME CLEARANCE TO COMBUSTIBLES AS THAT REQUIRED FOR GREASE
DUCTS SYSTEMS.
2 . There is also a 16ga. stainless steel grease duct extending
from the top of the hood to the exterior of the building and
terminating horizontialy through the exterior wall to a point
91above grade at its lowest point, aprox. 5' from an exterior
fire door opening to the kitchen.
SECTION 507 . 11 UMC REQUIRES EXHAUST OUTLETS FOR GREASE DUCTS
SERVING COMMERCIAL FOOD HEAT-FOOD PROCESSING EQUIPMENT SHALL
EXTEND THROUGH THE ROOF UNLESS OTHERWISE APPROVED BY THE
BUILDING OFFICAL. SUCH EXHAUST SHALL BE AT LEAST 2 ' ABOVE THE
ROOF SURFACE, AT LEAST 10' FROM PARTS OF THE SAME OR
CONTINUOUS BULDINGS, ADJACENT PROPERTY LINE OR AIR INTAKE
OPENING INTO ANY BUILDING, AND SHALL BE LOCATED AT LEAST 10'
ABOVE THE ADJOINING GRADE LEVEL.
3 . The grease duct passes through the kitchen side wall, and is
protected by a 5/8" wrap of type X gwb elevated with 26ga.
sheet metal saddle to provide the required 3" clearance .
SECTION 507 . 6 UMC REQUIRES THAT THE DUCT ENCLOSURE BE SEALED
AROUND THE DUCT AT THE POINT OF PENETRATIONAND VENTED TO THE
EXTERIOR THROUGH WEATHER -PROTECTED OPENINGS . THE ENCLOSURE
SHALL BE SEPERATED FROM THE DUCT BY AT LEAST 3" AND NOT MORE
12" AND SHALL SERVE A SINGLE GREASE DUCT EXHAUST DUCT SYSTEM.
4 . The fan provided to service the hood is a 3/4 hp rated at 1350
rpms, the factory specs were not at the site at the time of
inspection the contractor will provide them for verifacation
of the required minimun and maximun air velocity.
SECTION 507 . 8 UPC REQUIRES THAT GREASE DUCT SYSTEMS SERVING A
TYPE 1 HOOD SHALL BE DESIGNED AND INSTALLES IN A MANNER TO
PROVIED AN AIR VELOCITH WITHIN THE DUCT SYSTEM OF NOT LESS
THAN 1, 500 FEET PER MINUTE AND NOT TO EXCEED 2 , 500 FEET PER
MINUTE .
5 . During the pre-site inspection the requirment for make up-air
was not addressed but will need to be provided.
SECTION 402 . 4 UMC REQUIRES EACH COMMERCIAL KITCHEN SPACE
PROVIDED WITH AN EXHAUST SYSTEM SHALL HAVE AIR SUPPLIED TO THE
ROOM EQUAL TO THE AMOUNT OF AIR TO BE EXHAUSTED. MAKE UP
DIFFUSERS SHALL BE LOCATED TO PREVENT A SHORT-CIRCUITING OF
AIR FURNISHED TO THE EXHAUST SYSTEM. WINDOWS AND DOORS SHALL
NOT BE USED FOR THE PURPOSE OF PROVIDING MAKEUP AIR. THE
EXHAUST AND MAKE UP-AIR SYSTEM SHALL BE CONNECTEED BY AN
ELECTRIC INTERLOCKING SWITCH. COMPENSATING HOOODS SHALL MEET
THE AIR FLOW REQUIRMENTS SPECIFIED IN SECTIONS 508 . 7 . 2 THROUGH
508 . 7 . 4 . COMPENSATING HOODS SHALL EXTRACT AT LEAST 20 PERCENT
OF THEIR REQUIRED EXHAUST AIRFLOW FROM THE KITCHEN AREA.

Fixture Unit Equivalents
} The unit equivalent of plumbing fixtures shown in Tables 4-1 shall be based on the size of the trap required.
The unit equivalent of fixtures and devices not shown in Table 4-1 shall be based on the rated discharge
capacity in GPM (gallons per minute) (liters per minute or per second) in accordance with Table 4-2.
Maximum trap loadings for sizes up to four(4) inches (101.6 mm) are as follows:
1-1/4"- (31.8 mm) - 1 unit
1-1/2"- (38.1 mm) - 3 units
2" - (50.8 mm) - 4 units
3" - (76.2 mm) - 6 units
4" - (101.6 mm) 8 units
rI EXCEPTION: On self-service laundries.
The exception is made for self-service laundries because of the footnote at the end of Table 4 1. This
` states that clothes washers in groups of three (3) or more shall be rated at six (6) units each for the purposes
i of common horizontal and vertical waste pipe sizing. It is common practice, without any difficulties, to install
three (3) clothes washers on a three inch (76.1 mm) trap or four (4) clothes washers on a four(4) inch (101.6
mm) trap. Without this exception traps would be overlooked by sizing according to this table.

*NOTE- The size and discharge rating of each indirect waste receptor and each interceptor shall be based on
the total rated discharge capacity of all fixtures, equipment, or appliances discharging therein to, in accordance
with Table 4-2.
Drainage piping serving batteries of appliances capable of producing continuous flows shall be adequately
sized to provide for peak loads. Clotheswashers in groups of three (3) or more shall be rated at six (6) units
each for the purpose of common horizontal and vertical waste pipe sizing.
Water closets shall be computed as six(6)fixture units when determining septic tank size based on Appendix
1 of this Code.
Trap sizes shall not be increased to a point where the fixture discharge may be inadequate to maintain their
self-scouring properties.

Over 50 gals. per min. (3.15 Us) shall be determined by the Administrative Authority.
For a continuous flow into a drainage system, such as from a pump, sump ejector, air conditioning
equipment, or similar device, two (2) fixture units shall be allowed for each gallon per minute (0.06 Us) of
flow.
A fixture unit is a quantity in terms of which the load-producing effects on the plumbing system of

different kinds of plumbing fixtures are expressed on some arbitrarily chosen scale. The size of drainage
piping is determined from the total number of fixture units connected thereto. This is the load producing
effect. Most of the common types of plumbing fixtures with
yp t their assigned fixture unit values are listed i P 9 g n
Table 4-1. For any fixture, which is to be connected to a drainage system, and for which the fixture unit value
is not given in Table 4-1, it will be necessary to assign a fixture unit value based on the gallon per minute
(liters per minute or per second) discharge as given in Table 4-2.

(a) The minimum size of vertical and/or horizontal drainage piping shall be determined from the total of
all fixture units connected thereto, and in addition, the case of vertical drainage pipes, in accordance with
their length.
(b) Table 4-3 shows the maximum number of fixture units allowed on any vertical or horizontal drainage
pipe, building drain or building sewer' of a given size; the maximum number of fixture units allowed on any
branch interval of a given size; the maximum length (in feet) (meters) of any vertical drainage pipe of a given
size.

NOTE: The diameter of an individual vent shall not be less than one and one-fourth (1-114) inches (31.8 mm)nor
less than one-half(112)the diameter of the drain to which it is connected. Fixture unit load values for drainage and
vent piping shall be computed from Tables 4-1 and 4-2. Not to exceed one-third(113)of the total permitted length
of any vent may be installed in a horizontal position. When vents are increased one (1)pipe size for their entire
length, the maximum length limitations specified in this table do not apply.
Properly sizing a drainage system requires thorough familiarization of Table 4-3. With the exception of
the one and one-fourth inch (1-1/4) ( 31.8 mm) size all other sizes allow more unit loading on a vertical pipe
than on a horizontal pipe of the same size. Also, footnotes from one (1) to five (5) are noted in Table 4-3 in
specific locations and provide regulations as follows:
(1) This excludes trap arms from being sized by this table. Trap arm sizes are sized by Table 4-1.
(2) Except sinks, urinals, clothes washers and dishwashers. Most fixtures with one and one-half inch
(1-1/2) (38.1 mm) traps and an assigned value of two (2) fixture units, by Table 4-1 will usually have a one
and one-half (1-1/2) (38.1 mm) vertical drainage pipe, with the exception of sinks and urinals which are
required to have a minimum size drainage pipe of two (2) inches (50.8 mm).
(3) Except six-unit traps or water closets. You will note that footnote 3 is with reference to those units
associated with two (2) inch (50.8 mm) and two and one-half (2-1/2) inch (63.5 mm) drainage piping. Six unit
traps and water closets are required to have a minimum three (3) inch (76.2 mm) drainage pipe. It would be
impractical to reduce the drainage piping in the direction of flow.
(4) Only four(4) water closets or six-unit traps are allowed on any three (3) inch (76.2 mm) vertical pipe

INDIRECT AND SPECIAL WASTE SYSTEMS
General
The purpose of an indirect waste (airbreak or airgap) applied to any appurtenance or device used for the
purpose of handling or preparing food, is to prevent the possibility of wastes backing up to a compartment
where food is being stored or being processed and contaminating it.
The improper connection of equipment of this type can cause a severe health hazard, so the installer
should be well aware of the regulations governing such installations.
No evaporative cooler, air washer, or similar air conditioning equipment and no cold storage room,
refrigerator, cooling counter, compartment, receptacle, appurtenance, or device which is used, designed, or
intended to be used for storage of food or drink shall have any drain pipe in connection therewith directly
connected to any soil, waste, or vent pipe.
All such equipment shall be drained by means of an indirect waste pipe. All wastes draining such
equipment shall discharge through an airbreak into an open floor sink or other approved type receptor which
is properly connected to the drainage system.
ExcEPnoN: The foregoing does not apply to any dishwashing or culinary sink in any food preparation
room, unless such receptacle is used for soaking or washing ready to serve food, or to walk-in
refrigerators and combination walk-in, reach-in refrigerators used for storage and sales of products
packaged in bottles, cartons or containers.
Approval Required
No plumbing fixtures served by indirect waste pipes or receiving the discharge thereof shall be installed until
first approved by the Administrative Authority.
An indirect waste pipe does not connect directly with the drainage system, but conveys liquid wastes by
discharging into a plumbing fixture, interceptor or receptacle, directly connected to the drainage system.
An airbreak is a physical separation which may be a low inlet into the indirect waste receptor from the
fixture, appliance or device indirectly connected. See Fig. 6-1 a for an illustration of an airbreak. The size and
construction of the indirect waste pipe and fittings in those systems shall conform to Section 603.

The Uniform Plumbing Code covers only the basic plumbing problems in food processing sanitation in
requiring the separation of certain critical equipment from sewer connected drains. The Health Department is
vitally involved and generally works hand in hand with the Plumbing Official in arriving at the ultimate decision
as to how fixtures of this type should be wasted.

Basic Design and Size
The basic design and size of an indirect waste pipe is dictated by the type of fixture and/or appurtenance
being served. The UPC permits the use of a one-half (1/2) inch (12.7 mm) line as a minimum size for an
indirect waste pipe, provided that it is sized in accordance with the sections of the Code on drainage and vent
piping.
A good example of this is a double compartment sink used to soak and wash ready-to-serve food. Proper
design dictates that the drain outlet of each compartment be served by an one and one-half (1-1/2) inch (38.1
mm) tailpiece, which sets the size of the indirect waste pipe at one and one-half (1-1/2) inch (38.1 mm) and
that if it exceeds five (5) feet (1.5 m) in length, it be directly trapped. The fifteen (15) foot (4.6 m) limit applies
to its length. See Fig. 6-4 below.

Types and Location
All plumbing fixtures or other receptors receiving the discharge of indirect waste pipes shall be approved for
the purpose served. The capacity and shape of such receptors shall be designed to prevent splashing and
flooding.
All such receptors shall be located where they are readily accessible for inspection and cleaning. An
indirect waste receptor shall not be located in any toilet room, cupboard, storeroom, or any portion of a
building not in general use by the occupants.
A clotheswasher standpipe receptor may be installed in a toilet or bathroom area, provided the
clotheswasher is installed in the same room.

Whether you are the inspector or the installer, extreme care shall be taken to see that an airgap is used,
and not an airbreak when the use of sterile equipment is involved. An illustration of an indirectly wasted
sterilizer is provided to clearly show how sterile equipment should be installed. See Fig. 6-2d for illustration of
sterilizer wastes.
All appliances. devices, equipment or other apparatus not regularly classed as plumbing fixtures which
are equipped with pumps, drip or drainage outlets. may be drained by indirect waste pipes discharging into
an approved type receptor. Again, here the decision as to whether an airbreak or an airgap is used hinges
upon the type of equipment being served
An example of this point is that the Code provides that no domestic dishwasher shall be directly
connected to a drainage system or food waste disposer without the use of an approved dishwasher airgap
fitting on the discharge side of the dishwashing machine. See Fig. 6-6.

Condensate Wastes
Condensate waste from air conditioning coils may be directly connected to a lavatory tailpiece or a bathtub
overflow.
However, it must be noted that when a condensate waste discharges by direct connection to a lavatory
tailpiece or to an approved accessible inlet on a bathtub overflow. The connection shall be located in the area
controlled by the same person controlling the air conditioned space.
The Uniform Mechanical Code also covers indirect waste connections in reference to air conditioning
f systems, especially with reference to location. The last sentence of this section states that condensate or
waste water shall not drain over a public way.
Clean running water used exclusively as a cooling medium in an appliance device or apparatus. may
discharge into the drainage system through the inlet side of a fixture trap in the event that a suitable fixture is
not available to receive the discharge.
Such trap connection shall be by means of a pipe connected to the inlet side of an approved fixture trap,
the upper end terminating in a funnel shaped receptacle set adjacent to, and not less than six (6) inches
(152.4 mm) above the overflow rim of the fixture. See Fig. 6-7.

Recommended Procedures for Sizing Commercial Kitchen Grease Interceptors
H 1 Waste Discharge Requirements
(a) Waste discharge from fixtures and equipment in establishments which may contain grease, including
but not limited to, scullery sinks, pot and pan sinks, dishwashing machines, soup kettles and floor drains
located in areas where grease-containing materials may exist, may be drained into the sanitary waste
through the interceptor when approved by the Administrative Authority.
(b) Toilets, urinals, and other similar fixtures shall not waste through the interceptor.
(c) All waste shall enter the interceptor through the inlet pipe only.
H 2 Design
(a) Interceptors shall be constructed in accordance with the design approved by the Administrative
Authority and shall have a minimum of two compartments with fittings designed for grease retention.
(b) There shall be an adequate number of manholes to provide access for cleaning all areas of an
interceptor; a minimum of one (1) per ten (10) feet of interceptor length. Manhole covers shall be gastight in
construction having a minimum opening dimension of twenty (20) inches.
(c) In areas where traffic may exist the interceptor shall be designed to have adequate reinforcement and
cover.
H 3 Location
(a) Each grease interceptor shall be so installed and connected that it shall be at all times easily
accessible for inspection, cleaning, and removal of the intercepted grease. A grease interceptor may not be
installed in any part of a building where food is handled. Location of the grease interceptor shall meet the
approval of the Administrative Authority.
(b) Interceptors shall be placed as close as practical to the fixtures it serves.
(c) Each business establishment for which a grease interceptor is required shall have an interceptor which
shall serve only that establishment.

RECOMMENDED PROCEDURES FOR SIZING COMMERCIAL KITCHEN GREASE INTERCEPTORS
This chapter covers the Appendix H requirements for commercial kitchen grease interceptors and Chapter 7
requirements for grease and garbage, sand-silt oil and silt-lint grease interceptors. Although Appendix I deals
y specifically with private sewage disposal systems, the conditions and design requirements are the same in
both sections of the UPC for commercial grease interceptors.
Interceptors of these types have always been important in the functioning life of a private sewage
disposal system. Public sewer systems also can benefit, and interceptors are being required by some sewer
districts. This is especially true of commercial kitchens and industrial plant operations which discharge large
amounts of grease, heavy oils or sand, such as metal finishing plants, commercial garages and repair shops
or car washes. Even small amounts of grease, oil and solids from a number of sources can produce
increased maintenance costs and deterioration of sewage or industrial waste collection systems.
GREASE INTERCEPTORS
A grease interceptor is sometimes called a grease-garbage interceptor when a waste disposal unit is installed
in the waste line to the interceptor. Normally, the food waste disposal unit is not connected to the interceptor
when the waste is discharged into a public sewer system. On the other hand, if a commercial waste disposal
unit is to be used with a private sewage disposal system, it must discharge into a grease-garbage interceptor.
The key word here is commercial waste disposal unit, rather than a domestic waste disposal unit, which a
properly sized septic tank system can handle.
Section H-1(a)
"Waste discharge from fixtures and equipment in establishments which may contain grease, including but not
limited to, scullery sinks, pot and pan sinks, dishwashing machines, soup kettles and floor drains located in
areas where grease-containing materials may exist, may be drained into the sanitary waste through the
interceptor when approved by the Administrative Authority." The use of the word may in this section might
imply that the use of an interceptor is optional. The Code makes its clear in Sections 304(a) and 305(a) that
such interceptors are necessary if there are sufficient amounts of these waste materials to cause damage to
the sewer system or a private sewage disposal system.
The purpose of the interceptor is to intercept the liquid greasy waste and/or garbage and retain it for a
sufficient time to allow the greasy liquid to coagulate, and to allow the garbage to separate from the
discharging liquid. Because a drop in temperature is necessary, it is a good practice to connect any other
cold water or waste fixtures to the system to help reduce the water temperature in the interceptor. This might
include bar sinks or ice machine drains. When possible, chemical sterilization rather than hot water should be
used on dishes and utensils. Toilets, urinals, and similar fixtures should not be connected to the interceptor.
Lavatories in public restrooms also should be excluded.
LOCATION OF INTERCEPTORS
Probably the most important feature for the successful operation of an interceptor is the maintenance
program. Regardless of the size or design, an interceptor is only as good as its maintenance. For this reason
the UPC requires any type interceptor be installed and located so that it will be easily accessible for
v inspection, cleaning and removal of intercepted waste products. There must be an adequate number of
manholes to permit access for cleaning all areas of the interceptor. At least one manhole should be located
over the inlet, over the outlet, and one for each ten (10) feet of length between the inlet and outlet. In the
F case of the silt-lint grease interceptors for laundries and self-service laundromats, the rock filter should be
completely accessible. Manholes should not be less than twenty (20) inches in the least dimension.
All manholes should be extended to grade with gastight construction. For ease of cleaning, the
interceptor should be installed as near the grade surface as possible. The interceptor should be located near
the source of the waste for the best protection of the piping system. A grease and/or garbage interceptor may
not be located in any part of a building where food is handled or stored. A sand-silt-grease interceptor in large

buildings is sometimes located inside a building near the point the waste enters the piping system.
The interceptor should be located with proper clearances from the property line, water lines, building, etc.
Appendix H does not specifically mention location. Generally, horizontal distances for septic tanks should be
used for locating an interceptor. Appendix I, Section 1-9(b) specifies that interceptors coming under Appendix
I are to be located according to Table 1-1. Table 1-1 has no category for interceptors, but it is logical to use
distances for septic tanks as they serve a similar function. This is a reasonable approach, but can be
modified by the local Administrative Authority when circumstances justify such action.
DESIGN CONFIGURATIONS
1. Grease and/or Garbage Interceptors
The UPC requires that these interceptors be of not less than two compartments with fittings designed for
grease retention. The inlet, outlet, and compartment fitting should be of the septic tank tee type design with
the vertical leg extending to within twelve (12) inches of the interceptor floor and extending well above the
water level. The fitting should not be less than four (4) inches or the size of the building sewer, whichever is
greater.
The vent openings above the fittings allow the interceptor and sewer to vent back to the building vents,
thus no vent is required on the outlet end of the interceptor. See Figure H-1.
It is best to check with the local Administrative Authority for any local governing regulations because
requirements may vary between various jurisdictions. Some jurisdictions may require a sampling box so an
inspector can verify proper treatment or maintenance.
2. Sand-Silt-Oil Interceptors
The UPC establishes no specific design configuration except for Section 708. Note that Section 708(c)
requires that the interceptor have a 6 (six) inch minimum water seal trap and Section 708(d) requires a relief
vent. If a part of the waste constituency is sand and silt, usually the individual floor drains, drainage trenches
or other collecting means do not contain a trap due to the plugging by the sand. In these cases the
interceptor must be trapped and vented to prevent sewer gases and odors from coming into the building
through floor drains and similar fixtures. The vent is installed in the line from the interceptor to protect the trap
seal. This is on the outlet side of the interceptor. See Figure H-2.
In general, not less than two compartments should be used, similar to a grease interceptor. Usually the
inlet fittings is a tee turned crosswise (horizontal) without any leg going into the liquid. When extending a line
into the liquid, there is a tendency for sludge build-up which can cause a blockage. In this type of interceptor
we are dealing with oils which are not greatly effected by the waste temperature. The minor disturbance of
floating oil does not effect the retention ability of the interceptor.
Access to this type of interceptor should be the same as for a grease interceptor. If the interceptor has a
trap and vent on the outlet, it may not be necessary to have gastight covers if the intrusion of rain or storm
water is not a problem.
3. Silt-Lint, Grease Interceptors For Laundries and Laundromats
The UPC establishes no configurations for this type of interceptor. In general, to be effective this interceptor
needs to have two or three settling compartments, a rock filter, and a final settling chamber. The rock filter is

The first step is to estimate the number of meals possible to serve during a peak hour of operation. If this
figure cannot be obtained from the owners or from a similar operation, it can be estimated as follows:
For restaurants, multiply the number of seats by 60 divided by the estimated time a patron takes to eat. A
restaurant which serves people quickly may have a seating time from 30 minutes to 45 minutes. Another
restaurant may be the type for leisurely meals with a seating time from 90 minutes to 120 minutes.
In establishments such as rest homes, camp kitchens, the peak meals are equal to the occupant load.
The waste flow rate varies with the type of kitchen equipment used.
Storage factors help to provide space for storage of grease and/or garbage or other waste material and
vary with the amount of loading. The loading is established by the hours per day of operation.
A single service kitchen is one where the meals are served using disposable plates and utensils. Single
service kitchens are usually not fully equipped. Cleanup is the only dishwashing involved, therefore the
storage factor will be a"1," regardless of the hours of operation.
EXAMPLES
(a) A restaurant has seating for 125 patrons. Located next to a freeway, it operates 24 hours per day.
Equipment includes a dishwasher and a waste disposal unit. It will use a private sewage disposal system.
1. Estimated meals served per peak hour: 125 x 60 - 45 minutes = 167 meals per peak hour
2. Waste flow rate: 6 gal. + 1 gal. = 7 gallons per meal
3. Retention time: 2.5 hours
4. Storage factor: 3

Dear' Don,
The current status of the above permit indicates that a final
has not been completed. The exhaust for the kitchen fan does not
specifically meet the 1994 Uniform Mechanical Code on the outside
of the structure, however the installation will allow temporary use
until I can meet with the installer and discuss an alternative
method that will meet the intent of the code . I have discussed a
meeting time with Mark Lincoln, and we are prepared to visit the
site and discuss the issue. The facility may be used until we
resolve the issue of an alternative extension of the exhaust .

COMMERCIAL KITCHEN
PRE CONSTRUCTION INSPECTION
�. Scope of project : Install convection oven and counter top gas
O stove, dishwasher.
Code sections referenced in report are from 1994 UBC, 1994 UMC,
and 1991 UPC.
At the time of inspection 6/27/96 there was a 16ga.
stainless steel kitchen hood mounted at aprox. 18" from the
ceiling at the closest point, and mounted directly to the back
wall . the hood was suspended with noncombustible hanger
brackets and secured to the ceiling framing .
SECTION 505 . 7 UMC REQUIRES THAT HOODS BE MOUNTED WITH THE
SAME CLEARANCE TO COMBUSTIBLES AS THAT REQUIRED FOR GREASE
DUCTS SYSTEMS .
J There is also a 16ga. stainless steel grease duct extending
� from the top of the hood to the exterior of the building and
terminating horizontialy through the exterior wall to a point
91above grade at its lowest point, aprox. 5' from an exterior
fire door opening to the kitchen.
SECTION 507 . 11 UMC REQUIRES EXHAUST OUTLETS FOR GREASE DUCTS
SERVING COMMERCIAL FOOD HEAT-FOOD PROCESSING EQUIPMENT SHALL
EXTEND THROUGH THE ROOF UNLESS OTHERWISE APPROVED BY THE
BUILDING OFFICAL. SUCH EXHAUST SHALL BE AT LEAST 2 ' ABOVE THE
ROOF SURFACE, AT LEAST 10' FROM PARTS OF THE SAME OR
CONTINUOUS BULDINGS, ADJACENT PROPERTY LINE OR AIR INTAKE
OPENING INTO ANY BUILDING, AND SHALL BE LOCATED AT LEAST 10'
ABOVE THE ADJOINING GRADE LEVEL.
\3 . The grease duct passes through the kitchen side wall, and is
protected by a 5/8 wrap of type X gwb elevated with 26ga.
sheet metal saddle to provide the required 3" clearance .
SECTION 507 . 6 UMC REQUIRES THAT THE DUCT ENCLOSURE BE SEALED
AROUND THE DUCT AT THE POINT OF PENETRATIONAND VENTED TO THE
EXTERIOR THROUGH WEATHER -PROTECTED OPENINGS . THE ENCLOSURE
SHALL BE SEPERATED FROM THE DUCT BY AT LEAST 3" AND NOT MORE
12" AND SHALL SERVE A SINGLE GREASE DUCT EXHAUST DUCT SYSTEM.
G`C -4 . The fan provided to service the hood is a 3/4 hp rated at 1350
rpms, the factory specs were not at the site at the time of
inspection the contractor will provide them for verifacation '
of the required minimun and maximun air velocity.
�+ SECTION 507 . 8 UPC REQUIRES THAT GREASE DUCT SYSTEMS SERVING A
TYPE 1 HOOD SHALL BE DESIGNED AND INSTALLES IN A MANNER TO
PROVIED AN AIR VELOCITH WITHIN THE DUCT SYSTEM OF NOT LESS
v� THAN 1, 500 FEET PER MINUTE AND NOT TO EXCEED 2 , 500 FEET PER
MINUTE.
5 . During the pre-site inspection the requirment for make up-air
was not addressed but will need to be provided.
SECTION 402 .4 UMC REQUIRES EACH COMMERCIAL KITCHEN SPACE
PROVIDED WITH AN EXHAUST SYSTEM SHALL HAVE AIR SUPPLIED TO THE
ROOM EQUAL TO THE AMOUNT OF AIR TO BE EXHAUSTED. MAKE UP
DIFFUSERS SHALL BE LOCATED TO PREVENT A SHORT-CIRCUITING OF
AIR FURNISHED TO THE EXHAUST SYSTEM. WINDOWS AND DOORS SHALL
NOT BE USED FOR THE PURPOSE OF PROVIDING MAKEUP AIR. THE
EXHAUST AND MAKE UP-AIR SYSTEM SHALL BE CONNECTEED BY AN
ELECTRIC INTERLOCKING SWITCH. COMPENSATING HOOODS SHALL MEET
THE AIR FLOW REQUIRMENTS SPECIFIED IN SECTIONS 508 . 7 . 2 THROUGH
508 . 7 .4 . COMPENSATING HOODS SHALL EXTRACT AT LEAST 20 PERCENT
OF THEIR REQUIRED EXHAUST AIRFLOW FROM THE KITCHEN AREA.
