I believe that as you start to expand your operation and move away from having Alderbrook prepare and cater some of your food, you may find that your kitchen is not adequately sized.While you have the minimum necessary components (hand washing sink, 3-compartment sink, cold holding, and prep space), there are items such as cooking and hot holding equipment, prep sinks, hood vent/suppression system, and additional prep tables that may be needed with an expansion of menu or more preparation done at UCM. Having said this, the design that you submitted is approved, and you can continue with your project as far as I am concerned. Please call Mason County Community Services, Building and Planning (360) 427-9670 ext. 352 to see what is required from them.I will not issue a food permit without prior sign off from them. Prior to using the kitchen I require a pre-operational inspection to ensure all equipment is installed correctly and to confirm it matches the plans submitted.There will be an additional food establishment permit fee for the expanded operation, however,I am still figuring out the best category to put you in.I will update you when I get it straightened out. Please remind me of the following: - What food will be prepared (cut, cooked,assembled) at your establishment and what will be brought in from Alderbrook? The eventual goal will be to prep solely at UCM, but it currently will depend on the size of the group being catered to. - Will there be cooling of any foods? At this point no, but moving forward as growth expands; yes. - How will hot water be provided to both the hand washing and 3-compartment sink? A quote for plumbing is being processed and hot and cold water will be plumbed in. - What method of backflow prevention will the sinks be fitted with? This will be addressed with the plumbing quote. - About how many days per week will you be serving? 3 days moving to 4 or 5 during busy season. Having these questions answered will help greatly with the review process.
