A Mission-Seattle 301 E Wallace-Kneeland, Ste-.224, #134 Shelton, WA 98584 Mr. Megaw: Pursuant to your request for Information regarding fire protection for cooking surfaces at Camp Grace, 1 am providing Information that may be of Interest. The Uniform Mechanical Code Is the guidance document for the required protection for cooking surfaces in.co+mmerciai kitchens and facilities such as Camp Grace. The Mechanical Code .makes allowances for facilities that prepare food In a facility that is not considered to be a "food-processing" establishment, i.e., a restaurant. In those cases, the use of residential type ranges do not require the installation of a Class I Hood and a fire suppression system, because the intensity of use does not meet the same measure as that in a restaurant. Therefore, it is our interpretation that the use of two residential ranges in the kitchen at Camp Grace would not require the Installation of Class Hoods and fire suppression systems. However, the installation of Class 11 Hoods would be required for both appliances. Class ll Hoods provide for the ventilation of steam; heat, vapors or odors:A Class II Hood is the type of hood found over a range in a single-family home. In addition, a 5# dry chemical fire extinguisher is required within 25 feet of the residential ranges. 1 hope this information answers your questions. I'm sorry if we were unclear about what exactly we are wanting to do. Hopefully this letter will clarify things. The appliances we are wanting to use are 2 residential stoves (4 burners each with an oven) and a microwave. We will not be using any deep fryers or open grills. We plan for the stoves to be propane, but if electric burners have less restrictions, then we will go with them. We would like to know-what kind of ventilation and fire suppression requirements will be necessary for this kind of setup. If you could fax information on that, or call at your earliest convenience that would be great. Thanks again for all your help.
