1 In response to your building permit review letter dated 30 August 2010, here are
the conditions and changes regarding waste and water flows: j

Water Usage: The seating capacity of the restaurant will remain unchangec at
75 persons. The 3.5 gallon toilets are being replaced with 1.28 gallon toilets. j
j The existing dish washer uses 2.5 gallons per cycle, and is being replaced with a ;
more efficient dishwasher using 1.5 gallons per cycle. Other plumbing fixtures
are to remain. The water usage should reduce from its previous usage. The
current water line serving the space is 1". 1 calculate that the 1" line is more than a
adequate. Please see the attached Uniforrn Plumbing Code calculation of peak
' flow.

Waste: The waste system is connected to the existing septic tank/drain field
Plates are to be scraped into the garbage so that food waste is not added to the
system. They do not have a garbage disposal. I anticipate a reduction in we ste
flow when compared to the previous restaurant. Please see the attached
Uniform Plumbing Code calculation of peak flow, j

Grease Waste_ The grease waste discharges to a 1000 gallon grease
interceptor before entering the septic tank. The volume of grease waste will be
reduced due to the new dishwasher. The restaurant change from pizza to a
pizza and barbeque service may increase the volume of grease discharged o
the grease interceptor.

interceptor is 1000 gallons, and it is shared with another restaurant in this
building. Per table 10-3 in chapter 10 of 2006 UPC, a 750 gallon intercepto will
accept up to 35 fixture units. This interceptor appears to be adequately si ed
